  • 1/2 teaspoon garlic powder
  • 14 1/2 teaspoons chipotle chili powder (optional for more heat)
  • 1/4 teaspoon pepper
  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeño pepper, diced (seeds separated)
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced
  • 2 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper (or more to taste)

Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil, lime juice and zest with spices. Add chicken and let it marinate for at least 30 minutes.
  2. Prepare Avocado Salsa: Combine chopped avocados, tomatoes, corn, onions, bell pepper, jalapeño, cilantro, garlic (or garlic powder), lime juice and seasonings in a bowl. Mix gently.
  3. Cook the Chicken: Heat a grill pan over medium-high heat. Cook marinated chicken for 5 minutes on each side until cooked through (internal temperature of 165°F).
