  • 400 grams lean ground beef
  • 1 large egg
  • 100 grams crustless bread
  • 125 ml white grape juice
  • 100 grams onion (minced)
  • 4 garlic cloves (minced)
  • ½ teaspoon ground cumin
  • 1 teaspoon dried oregano (+ extra to serve with)
  • 2 teaspoons dried parsley (or fresh minced)
  • 1 teaspoon fine sea salt (+ extra for the sauce)
  • ½ teaspoon ground pepper (+ extra for the sauce)
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups hot water or stock (vegetable, beef, or chicken stock)
  • 810 tablespoons lemon juice

Instructions

  1. In a large bowl, combine all meatball ingredients and mix gently until just combined.
  2. Shape the mixture into small balls (about the size of golf balls) and place them on a plate.
  3. Heat olive oil in a large skillet over medium heat and cook the meatballs until browned on all sides (about 5-7 minutes).
  4. Remove the meatballs and melt butter in the same skillet. Whisk in flour, then gradually add hot water or stock while stirring continuously.
  5. Stir in lemon juice, salt, and pepper to create the sauce.
  6. Return the meatballs to the skillet and simmer together for about 15 minutes.
