- 2 medium sweet potatoes, cubed
- 12 oz Brussels sprouts, halved
- 1/4 cup panko bread crumbs
- 1/4 cup milk
- 1/2 cup low sodium soy sauce or coconut aminos
- 1/3 cup maple syrup
- 2 tablespoons rice vinegar
- Gochujang (or sriracha) for spice
- Preheat the oven to 425°F.
- On a baking sheet, toss sweet potatoes and Brussels sprouts with sesame oil and salt. Roast for 15 minutes.
- In a bowl, combine panko and milk; let sit. Mix in ground beef, scallions, ginger, garlic, salt, and gochujang until combined.
- Form meatballs (about 20) and place on the baking sheet alongside veggies; drizzle with sesame oil.
- Bake for another 14-16 minutes until cooked through (165°F).
- For the BBQ sauce: Combine all sauce ingredients in a saucepan; bring to boil and thicken with cornstarch mixed with water.
- Toss cooked meatballs in BBQ sauce before serving.
