  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix together flour, sugar, baking powder, melted butter, and salt until crumbly. Reserve 1/2 cup for topping.
  2. Press the remaining mixture into an 8×8-inch baking pan lined with parchment paper and bake for 12-15 minutes until golden.
  3. In another bowl, whisk eggs, sugar, flour, lemon juice, and lemon zest until smooth.
  4. Pour the lemon mixture over the baked crust and sprinkle reserved crumbs on top.
  5. Bake again for 20-25 minutes until filling is set and crumbs are golden.
  6. Cool completely at room temperature before chilling in the refrigerator for at least one hour. Slice into squares and serve.
