  • 1 lb large shrimp, peeled and deveined
  • 12 oz orzo pasta
  • 4 oz crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, roughly chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp extra-virgin olive oil
  • Juice of 1 large lemon (about 3 tbsp)
  • Zest of 1 lemon
  • 1 garlic clove, finely grated
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/4 tsp crushed red pepper flakes (optional)
  • 2 tbsp capers, rinsed and drained (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Toss shrimp with olive oil, salt, pepper, oregano, smoked paprika, and lemon zest in a bowl. Spread on a baking sheet and roast for 8–10 minutes until opaque.
  2. Cook orzo in salted water according to package instructions; drain and return to pot.
  3. Stir in olive oil, lemon juice, grated garlic, and optional red pepper flakes into the warm orzo.
  4. Fold in cherry tomatoes, spinach, parsley, and dill until spinach wilts slightly.
  5. Gently mix in crumbled feta cheese and capers if desired. Top with roasted shrimp before serving.
