  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • Salt and pepper (for seasoning)

Instructions

  1. Pound the chicken breasts to an even thickness, then season with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat. Cook the chicken for about 3-4 minutes on each side until golden brown. Remove from the pan.

  5. Add spinach and cook until wilted, then return the chicken to the pan, spooning sauce over it. Cover for two minutes to meld flavors.
