  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ½ cup tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. Marinate chicken by mixing olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper. Coat chicken thoroughly and let sit for at least 30 minutes.
  2. Cook marinated chicken in a skillet over medium heat for 5–6 minutes per side until cooked through. Allow resting before slicing.
  3. Assemble bowls with rice or quinoa as the base. Top with sliced chicken and add cherry tomatoes, diced cucumber, red onion, and crumbled feta.
  4. Drizzle tzatziki sauce over each bowl and garnish with fresh parsley.
