  • 1 lb ground chicken
  • 1 medium onion, diced
  • 3 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the diced onion until translucent (about 5 minutes). Add minced garlic and cook for an additional 30 seconds.
  2. In a large bowl, mix sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, salt, and pepper until well combined.
  3. Shape the mixture into approximately eight patties (½ inch thick).
  4. Heat remaining olive oil in the skillet and cook patties for about 5-6 minutes on each side until golden brown and cooked through.
  5. Drain on paper towels before serving warm with your choice of garnishes.
