1 lb. ground chicken
1 medium onion, diced
1 cup baby spinach, chopped
3 tablespoons olive oil
1/2 cup breadcrumbs
1/4 cup Greek yogurt
2 tablespoons fresh dill, finely chopped
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Instructions
Sauté the diced onion in 1 tablespoon of olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and cook for another 30 seconds. Remove from heat to cool.
In a large bowl, combine the sautéed onion and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix well.
Shape the mixture into eight patties about ½ inch thick.
In a skillet over medium heat, add the remaining olive oil. Cook each patty for about 5-6 minutes on each side until golden brown and cooked through.
Drain excess oil on paper towels before serving warm.
