  • 2 boneless, skinless chicken breasts
  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Spices: paprika, Italian seasoning, salt, pepper
  • Fresh parsley for garnish

Instructions

  1. Cook spaghetti according to package instructions until al dente; drain and set aside.
  2. In a skillet over medium heat, add olive oil and sauté seasoned chicken pieces until golden brown (5-7 minutes). Remove and set aside.
  3. In the same skillet, melt butter; sauté chopped onion for 3-4 minutes, then add minced garlic for another 30 seconds.
  4. Pour in chicken broth and heavy cream; stir and simmer for about 5 minutes to thicken.
  5. Add cooked spaghetti and chicken back to the skillet; toss to coat in the sauce.
  6. Sprinkle cheese on top; cover to melt (2-3 minutes).
