  • 2 cups sugar
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 4 large eggs
  • ¾ cup vegetable oil
  • ½ cup sour cream
  • 1 teaspoon pure vanilla extract
  • ½ cup unsalted butter (softened)
  • 1 7-ounce jar vegan marshmallow fluff
  • 2 ½ cups confectioners' sugar
  • 2 to 3 tablespoons milk
  • 48 M&Ms or Skittles or other small, round colored candies

Instructions

  1. Preheat your oven to 350°F and line muffin tins with paper liners.
  2. In a saucepan, bring 1 ½ cups of water to boil, then whisk in cocoa powder and sugar until smooth. Let cool.
  3. In a separate bowl, combine flour, baking powder, baking soda, and salt.
  4. Beat eggs, oil, sour cream, and vanilla together until smooth.
  5. Mix the cooled chocolate mixture into the egg mixture, then gradually add the dry ingredients until just combined.
  6. Pour batter into liners (three-quarters full) and bake for about 20 minutes or until a skewer comes out clean. Cool on wire racks.
  7. For frosting: Blend softened butter with vegan marshmallow fluff; gradually mix in confectioners' sugar and vanilla until creamy.
  8. Pipe frosting onto cooled cupcakes to create mummy wraps and add candy eyes.
