Ingredients

  • Baguette (sliced)
  • Olive oil
  • Baby Bella mushrooms
  • Garlic
  • Marsala apple vinegar
  • Brie cheese
  • Fresh parsley
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush both sides with olive oil. Toast for 3-5 minutes until golden brown.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté minced garlic until fragrant (about 1 minute). Add sliced mushrooms and cook until browned (5-7 minutes). Stir in Marsala apple vinegar and simmer until reduced by half. Season with salt, pepper, and crushed red pepper flakes if desired.
  3. Place slices of brie on toasted baguette pieces and spoon mushroom mixture atop each slice. Bake for an additional 3-5 minutes until brie is melted.
  4. Garnish with chopped fresh parsley before serving warm.
