  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1½ cups long-grain white rice (uncooked)
  • 10 oz can Rotel diced tomatoes with green chilies
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar or Mexican blend cheese

Instructions

  1. In a large pot or deep skillet, heat olive oil over medium heat. Add chicken pieces along with garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté for about 5–6 minutes until mostly cooked through.
  2. Stir in uncooked rice and Rotel (juices included), cooking for an additional 1–2 minutes to toast the rice lightly.
  3. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 20–25 minutes until the rice is tender.
  4. Stir in nacho cheese sauce and 1 cup of shredded cheese until melted and creamy.
  5. Top with remaining cheese and let sit for about 5 minutes before serving. Garnish with cilantro or diced avocado as desired.
