  • 1 lb Italian sausage (chicken or turkey)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and freshly cracked black pepper to taste

Instructions

  1. In a large pot over medium heat, heat olive oil and brown the Italian sausage, breaking it apart as it cooks.
  2. Remove the browned sausage but keep the drippings in the pot. Add diced onion and minced garlic; sauté until soft and fragrant.
  3. Stir in drained tomatoes, chicken stock, basil, oregano, and return the sausage to the pot. Simmer for about 10 minutes.
  4. Add ditalini pasta and cook until al dente (8–10 minutes).
  5. Reduce heat and stir in heavy cream and Parmesan cheese until melted.
  6. Season with salt and pepper to taste and garnish with fresh parsley before serving.
