  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream (or plant-based alternative)
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • Dried basil and oregano, salt, and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, sauté the olive oil and sausage until browned. Remove from pot.
  2. Add onion and garlic; cook until softened.
  3. Stir in tomatoes, chicken stock, basil, oregano, and the browned sausage. Simmer for about 10 minutes.
  4. Add ditalini pasta; cook until al dente (8–10 minutes).
  5. Lower heat to add heavy cream and Parmesan cheese; stir until smooth and creamy.
