  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces goat cheese
  • 2 lemons, zested
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced

Instructions

  1. Prepare the blackberry jam: In a saucepan over medium heat, combine blackberries, water, lemon juice, and sugar. Simmer for 20-30 minutes until thickened. Smash gently with a fork and let cool.
  2. Thaw and roll out puff pastry: Allow the sheets to thaw at room temperature for about 20-25 minutes. Roll each sheet into a rectangle on a floured surface.
  3. Assemble the twists: Spread half of the goat cheese over one sheet, followed by half of the blackberry jam. Cut into strips, fold each strip in half lengthwise, and twist gently.
  4. Bake: Brush with an egg wash made from whisking one egg and sprinkle with lemon-thyme sugar mixture. Bake at 400°F for about 16-18 minutes until golden brown.
