  • 350g pumpkin, peeled and diced
  • 500g gnocchi
  • 50g blue cheese or soft goat's cheese
  • 6g sage leaves
  • 400ml vegetable stock
  • ¼ cup single dairy cream
  • 50g mozzarella or cheddar cheese
  • 30g pecans

Instructions

  1. In a pot, combine diced pumpkin and vegetable stock. Bring to a boil then simmer until pumpkin is tender.
  2. In another pot, boil salted water and cook gnocchi until they float (about 2-3 minutes). Drain and mix with the pumpkin mixture along with dairy cream.
  3. Stir in crumbled blue cheese and chopped sage until melted.
  4. Transfer to an oven-proof baking dish, top with shredded mozzarella (or cheddar), and sprinkle with pecans.
  5. Bake at 180°C (350°F) for about 20 minutes until golden brown.
