  • 350g pumpkin, peeled and diced
  • 500g gnocchi
  • 50g blue cheese or soft goat's cheese
  • 6g sage leaves
  • 400ml vegetable stock
  • ¼ cup single dairy cream
  • 50g mozzarella or cheddar cheese
  • 30g pecans

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Boil water in a pot and cook the pumpkin cubes until tender, about 10 minutes.
  3. Drain excess water and combine cooked pumpkin with gnocchi, blue cheese (or goat's cheese), sage leaves, vegetable stock, and dairy cream in a large bowl.
  4. Transfer mixture into a greased baking dish and top with mozzarella (or cheddar) and chopped pecans.
