  • 6 8-inch tortillas
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/3 cup melted butter
  • 4 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 3/4 cup canned pumpkin puree
  • 1/2 tsp pure vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 cup heavy whipping cream
  • 2 tbsp powdered sugar (for whipped cream)
  • Chopped pecans (for garnish)

Instructions

  1. Preheat your oven to 400°F. Cut out rounds from each tortilla using a cookie cutter.
  2. Mix granulated sugar and cinnamon on a plate. Puncture each tortilla round with a fork to prevent bubbling.
  3. Brush each round with melted butter and coat in cinnamon sugar. Place between muffin tins upside down and bake for about 10 minutes until golden brown.
  4. While baking, whip the heavy cream with powdered sugar until stiff peaks form.
  5. In another bowl, mix cream cheese and powdered sugar until smooth. Add pumpkin puree, vanilla extract, and pumpkin pie spice; blend well.
  6. Fill cooled taco shells with the pumpkin mixture, top with whipped cream and sprinkle with pecans.
