  • ½ cup butter (room temperature)
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup milk
  • 1/2 cup cold butter, cubed (for crumb topping)
  • 1 cup light brown sugar (for crumb topping)
  • 1 cup flour (for crumb topping)
  • 1 teaspoon cinnamon (for crumb topping)
  • 1/2 teaspoon nutmeg (for crumb topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, whisk together flour, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In another bowl, blend room-temperature butter with pumpkin puree until combined. Add sugar and mix until fluffy. Beat in eggs and vanilla.
  4. Gradually add the dry ingredients alternately with milk to form a smooth batter.
  5. For the crumb topping, mix cold cubed butter with brown sugar, flour, cinnamon, and nutmeg until small crumbs form.
  6. Layer half of the batter in the prepared dish, sprinkle half of the crumbs on top, then layer the remaining batter and finish with the rest of the crumbs.
  7. Bake for 45–55 minutes or until a toothpick comes out clean.
