  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter (plus more for greasing)
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese (divided)
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roast the garlic by cutting off the top and wrapping it in foil with olive oil and salt.
  3. Grease a baking dish with butter.
  4. Thinly slice the potatoes and layer them upright in the baking dish.
  5. In a saucepan, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; heat gently until blended.
  6. Squeeze roasted garlic into a bowl and mash; mix into the cream mixture.
  7. Pour over layered potatoes ensuring all slices are coated.
  8. Cover with foil and bake for 40 minutes.
  9. Remove foil, add remaining cheese on top, and bake uncovered for an additional 30 minutes until golden brown.
  10. Let cool slightly before serving; garnish with fresh chives.
