  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup (250 ml) heavy cream
  • 1/4 cup (60 ml) whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup (40g) grated parmesan cheese, divided
  • 2 cups (about 220g) shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic by cutting off the top of the head, drizzling with olive oil, wrapping in foil, and baking for about 30 minutes.
  3. Grease a 9×13-inch baking dish with butter.
  4. Peel and thinly slice the potatoes.
  5. Layer potato slices upright in the greased baking dish.
  6. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper until well mixed.
  7. Squeeze roasted garlic cloves into a paste and stir into the cream mixture.
  8. Pour the creamy mixture over the layered potatoes and cover tightly with foil.
  9. Bake for about 40 minutes until potatoes are tender.
  10. Remove foil and sprinkle shredded cheese on top; return to oven uncovered for another 30 minutes until bubbly and golden.
  11. Let cool slightly before serving, garnished with fresh chives.
