  • 2 cups cauliflower florets
  • 2 cups cubed butternut squash
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 5 ounces baby kale or spinach
  • 1 pound pizza dough
  • 2 tablespoons extra virgin olive oil
  • 2 cups shredded Asiago cheese, divided
  • 1/4 cup chopped Kalamata olives
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cloves garlic, minced
  • 1 teaspoon minced fresh rosemary

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss cauliflower florets and butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden.
  3. Prepare the pizza dough according to package instructions or roll out homemade dough.
  4. Brush the dough with olive oil, sprinkle minced garlic, layer baby kale or spinach, and add roasted vegetables along with olives and half of the cheese.
  5. Bake for 15-20 minutes until bubbly and golden brown. Top with remaining cheese and rosemary before serving.
