  • 8 ounces dried pasta
  • 2/3 cup pesto (homemade or jarred)
  • 1/4 cup grated Parmesan cheese
  • 12 teaspoons olive oil
  • 1 teaspoon lemon juice (from 1/2 lemon)
  • Kosher salt
  • Black pepper

Instructions

  1. Preheat your oven to 400°F (start with the salmon inside for gentle cooking). Line a baking sheet with parchment paper and place the salmon filets skin-side down. Brush with olive oil and lemon juice, then season with salt and pepper.
  2. Roast the salmon for about 20 minutes until flaky.
  3. Meanwhile, boil salted water in a large pot. Cook the pasta according to package instructions until al dente; reserve some pasta water before draining.
  4. Return drained pasta to the pot, add pesto and Parmesan cheese, mixing until well combined. Adjust sauce consistency with reserved pasta water if needed.
