  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Form small meatballs (about an inch in diameter).
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs in batches until golden (about 5 minutes).
  3. Add chopped onions to the pot and sauté until translucent (3-4 minutes).
  4. Pour in chicken broth; bring to a boil then reduce heat to simmer.
  5. Add browned meatballs back into the pot and let simmer for about 15 minutes.
  6. Stir in heavy cream and fresh spinach; cook until spinach wilts (2 minutes).
