  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • Salt and pepper to taste
  • 1 package of puff pastry (2 sheets, thawed)
  • Optional: ½ cup grated cheese, 1 tablespoon Dijon mustard

Instructions

  1. Caramelize the onions by heating olive oil in a skillet over medium heat. Add sliced onions with a pinch of salt; cook slowly until golden brown (15-20 minutes).
  2. In a bowl, mix ground sausage with the caramelized onions, thyme, salt, and pepper. If desired, add cheese and mustard.
  3. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Roll out puff pastry on a floured surface and cut into rectangles (4×6 inches). Place filling on each rectangle, fold over, seal edges with a fork, and brush tops with beaten egg.
