  • 4 cups vegetable broth
  • 1/2 cup nutritional yeast
  • 2 cups cherry tomatoes
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (like basil or thyme), chopped

Instructions

  1. Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, garlic, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes.
  2. In a pot, bring vegetable broth to boil. Gradually whisk in polenta; reduce heat and stir constantly until thickened (about 5 minutes). Stir in nutritional yeast.
  3. Sauté minced garlic in olive oil; add spinach until wilted.
  4. In a greased baking dish, layer half of the polenta, sautéed spinach, half of the roasted tomatoes, remaining polenta, and top with more tomatoes.
  5. Bake for 20-25 minutes until heated through.
