  • 4 salmon fillets (or 1 lb salmon, cut into cubes)
  • 3 tbsp sriracha sauce
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 2 cups cooked jasmine rice
  • 2 cups cauliflower florets
  • Olive oil, salt, and pepper to taste

Instructions

  1. Prepare the Marinade: In a bowl, mix sriracha sauce, honey, soy sauce, minced garlic, lime juice, and sesame oil.
  2. Marinate the Salmon: Coat salmon with half the marinade and let it sit for 15 minutes. Reserve the other half.
  3. Roast the Cauliflower: Preheat oven to 400°F (200°C). Toss cauliflower with olive oil, salt, and pepper; roast for 20-25 minutes until golden.
  4. Cook the Salmon: Sear marinated salmon in a skillet on medium-high heat for about 2-3 minutes per side until caramelized.
  5. Glaze the Salmon: Pour reserved marinade over cooked salmon; let simmer for 1-2 minutes until thickened.
  6. Assemble the Bowls: Serve jasmine rice topped with roasted cauliflower and glazed salmon.
  7. Garnish as desired with green onions, cilantro, and sesame seeds.
