  • 3 medium apples (Granny Smith, Honeycrisp, or Braeburn), peeled, cored, and thinly sliced
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cardamom (optional)
  • 1/2 cup unsalted butter, melted and cooled
  • 3/4 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1/2 cup plain yogurt or sour cream

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking pan.
  2. Peel, core, and slice the apples; set aside.
  3. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and cardamom.
  4. In another bowl, combine melted butter, sugar, eggs, vanilla extract, and yogurt until smooth.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Spread half of the batter into the prepared pan; layer half of the apple slices on top.
  7. Add remaining batter over apples and top with the rest of the apple slices.
  8. Mix sugar and cinnamon for topping; sprinkle over the cake.
  9. Bake for 40–45 minutes until golden brown. Allow to cool before serving.
