  • ½ pound turkey strips (cut into small dice)
  • 3 medium shallots (thinly sliced)
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear (peeled and diced)
  • 1 lemon (zested and juiced)
  • ½ cup chopped parsley
  • Freshly ground black pepper (to taste)

Instructions

  1. Prep the pear by peeling, slicing, and dicing it into small pieces. Toss it in a bowl with lemon juice to prevent browning.
  2. In a large skillet over medium heat, cook the turkey strips until golden brown. Transfer to a paper towel-lined plate.
  3. In the same skillet, add shallots and sauté for about one minute until softened. Stir in the Dijon mustard.
  4. Add the peas and prepared pears to the skillet; cook for another five minutes until heated through.
  5. Turn off the heat and fold in half of the crispy turkey strips along with parsley and black pepper.
  6. Serve in a large bowl topped with remaining turkey strips and lemon zest.
