  • 1 large boneless turkey breast half (about 2 1/2 lbs)
  • 5 ounces whole wheat French bread (cut into cubes)
  • 2 tablespoons dried cranberries (chopped)
  • 3/4 cup chicken broth
  • Fresh sage leaves
  • Salt and pepper
  • 1/2 tablespoon butter
  • 1/2 medium onion (minced)
  • 1 large stalk celery (minced)
  • 4 fresh sage leaves (minced)
  • 1/4 cup chopped parsley
  • 1/2 teaspoon turkey or poultry seasoning
  • 1 large egg (beaten)
  • 2 cups chicken broth for gravy
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). In a skillet, melt butter and sauté minced onion and celery until soft. Stir in sage, parsley, turkey seasoning, salt, pepper, bread cubes, cranberries, and chicken broth until well combined.
  2. Place the turkey breast skin-side down on a surface. Pound to an even thickness, season with salt, and spread the stuffing evenly over it.
  3. Roll the turkey tightly from one end and tie it with cooking twine at intervals. Rub softened butter on the outside and sprinkle with salt and pepper.
  4. Roast in the oven for about 60 minutes or until the internal temperature reaches 165°F (74°C), basting occasionally.
  5. For gravy, whisk flour into pan drippings over medium heat; slowly add chicken broth until thickened. Season with sage, salt, and pepper.
