  • 1 teaspoon salted butter (softened)
  • 1/2 tablespoon butter
  • 4 fresh sage leaves (minced)
  • 1/2 teaspoon turkey or poultry seasoning
  • 1/4 teaspoon kosher salt and fresh pepper (to taste)
  • 1 large egg (beaten)
  • 2 cups turkey or chicken broth
  • 2 leaves fresh sage
  • 3/4 teaspoon turkey or poultry seasoning

Instructions

  1. Prepare the stuffing by sautéing onion and celery in butter until tender. Mix in herbs, bread cubes, cranberries, beaten egg, and chicken broth until combined.
  2. Lay the turkey breast flat and season with salt. Spread the stuffing evenly on top. Roll tightly and secure with twine.
  3. Preheat oven to 350°F (175°C). Roast the roulade for about 60 minutes or until the internal temperature reaches 165°F (75°C).
  4. For gravy, whisk together broth, sage leaves, and flour in a saucepan until smooth; simmer until thickened.
