  • 1/2 cup granulated sugar (for filling)
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • Seeds from 1 vanilla bean
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter; press into each liner.
  3. Beat cream cheese and sugar in a large bowl until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream, heavy cream, vanilla bean seeds, and vanilla extract until fully blended.
  4. Divide batter among liners and bake for 20–25 minutes until set but slightly jiggly in the center. Cool to room temperature before refrigerating for at least 2 hours.
  5. Before serving, sprinkle sugar on top of each cupcake and caramelize with a kitchen torch until golden.
