  • 1/2 cup (115g) vegan butter or margarine (chilled)
  • 3 tablespoons (35g) granulated sugar (brown sugar or coconut sugar)
  • 23 tablespoons cold water (as needed)
  • 45 apples (of choice, cored)
  • 3 tablespoons (40g) granulated sugar (brown sugar or coconut sugar)
  • 2 teaspoons ground cinnamon
  • 1 tablespoon (8g) all-purpose plain flour (or gluten-free flour)
  • Dash of lemon juice (optional)
  • 2 tablespoons (30g) vegan butter or coconut oil (melted)
  • 3 tablespoons (60g) apricot jam (any light-colored jam)

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a 9-inch loose-bottom tart pan.
  2. In a bowl, mix flour, chilled vegan butter, and sugar until crumbly. Gradually add cold water to form dough.
  3. Roll out the dough and fit it into the tart pan; trim excess.
  4. Core and slice apples, then toss with sugar and cinnamon; let sit for 10 minutes.
  5. Layer apples in the pastry shell, sprinkling with extra flour.
  6. Bake for 70 minutes until golden brown and bubbly.
  7. Glaze with melted vegan butter mixed with apricot jam before serving.
