Ingredients

Scale
  • 8 ounces cow’s milk feta cheese
  • ¼ cup honey
  • 1 teaspoon red pepper flakes
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons whole milk (or plain Greek yogurt)
  • 2 tablespoons olive oil
  • ⅓ cup chopped pistachios (for garnish)
  • toasted baguette slices (for serving)

Instructions

  1. Break the feta into pieces and rinse briefly under cold water to remove excess salt. Let it drain.
  2. In a small saucepan, combine honey and red pepper flakes. Warm over medium heat until simmering, then cool.
  3. In a food processor, blend the drained feta with lemon juice and milk (or yogurt) until it resembles ricotta. Slowly add olive oil while processing until smooth and creamy.
  4. Transfer to a serving bowl, create a swirl on top, drizzle with cooled honey, and garnish with pistachios. Serve alongside toasted baguette slices.
