Ingredients

Scale
  • 8 ounces cow’s milk feta cheese
  • ¼ cup honey
  • 1 teaspoon red pepper flakes
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons whole milk (or plain Greek yogurt)
  • 2 tablespoons olive oil
  • ⅓ cup chopped pistachios (for garnish)
  • toasted baguette slices (for serving)

Instructions

  1. Break the feta into pieces and rinse briefly under cold water to reduce saltiness. Drain well.
  2. In a small saucepan, warm honey with red pepper flakes over medium heat until simmering, then remove from heat and let cool.
  3. In a food processor, blend drained feta, lemon juice, and milk (or yogurt) until smooth. Gradually add olive oil while processing until creamy.
  4. Transfer to a serving bowl, create a swirl on top, drizzle with cooled hot honey, and garnish with chopped pistachios.
  5. Serve immediately with toasted baguette slices.
